Flax Seed Pumpkin Bread

Just in time for fall.  Cook up your pumpkins and make this great tasting pumpkin bread with flax seed.  The flax seed adds a delicious nutty flavor to your bread.  Not to mention the added health benefits of Omega 3, fiber, and protein.

Pumpkin 'N Spice Bread
2 cups sugar
3/4 cup canola oil
3 eggs
2 cups pumpkin
2 cups flour
1 cup ground flax seed
1 teaspoon baking soda
3/4 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/4 teaspoon salt
2 teaspoon pumpkin pie spice
Preheat oven to 350°.  Grease two loaf pans.  Blend sugar and oil thoroughly.  Beat in eggs until light.  Add pumpkin, blend.  Add flour, ground flaxseed, baking soda, baking powder, cinnamon, nutmeg, cloves, salt, and pumpkin pie spice.  Beat on load speed until blended.  Pour batter into greased loaf pans.  Bake for 1 hour.  When done, leave in pans for 15 minutes to cool.  Remove from pans. Sprinkle with confectionary sugar if you'd like.
