Just in time for fall. Cook up your pumpkins and make this great tasting pumpkin bread with flax seed. The flax seed adds a delicious nutty flavor to your bread. Not to mention the added health benefits of Omega 3, fiber, and protein.
Pumpkin 'N Spice Bread
2 cups sugar
3/4 cup canola oil
2 cups pumpkin
2 cups flour
1 cup ground flax seed
1 teaspoon baking soda
3/4 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/4 teaspoon salt
2 teaspoon pumpkin pie spice
Preheat oven to 350°. Grease two loaf pans. Blend sugar and oil thoroughly. Beat in eggs until light. Add pumpkin, blend. Add flour, ground flaxseed, baking soda, baking powder, cinnamon, nutmeg, cloves, salt, and pumpkin pie spice. Beat on load speed until blended. Pour batter into greased loaf pans. Bake for 1 hour. When done, leave in pans for 15 minutes to cool. Remove from pans. Sprinkle with confectionary sugar if you'd like.

Tim Fort, a.k.a., “The Kinetic King,”
will appear at the Expo, Sat., Oct. 20, 10a to 5p
The self-proclaimed “King of Kinetic Art” will demonstrate his “Clever Lever Gadget” in the afternoon. Fort, who auditioned for “America’s Got Talent” in 2011 but failed to become one of the top ten contestants (he came in 13th), builds fantastic room-sized structures with painted sticks, then knocks them over (he calls it “detonation”) like dominoes. He has performed his art for the St. Paul Art Crawl, the American Society for Quality in Anaheim, Calif., and the Tucson Festival of Books.
