Chocolate Chip Cookies With Flax Seed
 
Cream together:
    1/2 cup + 6 Tbsp butter
    1 c. sugar
    1/2 c brown sugar
Add:
    2 eggs
    1 tsp vanilla
Sift together and add:
    1 3/4 c flour
    3/4 c ground flax seed
    1/2 tsp salt
    1 tsp soda
Add 6 oz pack chocolate chips
Bake 8 minutes at 350 degrees.

Rhubarb Crisp with Flaxseed

Spring is a great time to try new rhubarb recipes.  This Rhubarb Crisp substitutes flax seed for some of the flour and butter found in other recipes.  A great tasting crisp with the added benefit of flax seed. 

Rhubarb Crisp

5 cups rhubarb
1 Tablespoon flour
½ Tablespoon ground flax seed
1 cup sugar
1 teaspoon cinnamon
1/8 teaspoon salt

Mix these ingredients together and put in the bottom of a 9 x 13 pan.

Then mix together:
9 Tablespoons butter
½ cup flour
¼ cup ground flaxseed
1 cup brown sugar
1 cup quick oatmeal

Sprinkle on top of the rhubarb mixture.

Bake at 350° for 40-50 minutes.

Top with ice cream or whip cream if you like.

Flax Seed Pumpkin Bread

Just in time for fall.  Cook up your pumpkins and make this great tasting pumpkin bread with flax seed.  The flax seed adds a delicious nutty flavor to your bread.  Not to mention the added health benefits of Omega 3, fiber, and protein.

Pumpkin 'N Spice Bread
2 cups sugar
3/4 cup canola oil
3 eggs
2 cups pumpkin
2 cups flour
1 cup ground flax seed
1 teaspoon baking soda
3/4 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/4 teaspoon salt
2 teaspoon pumpkin pie spice
Preheat oven to 350°.  Grease two loaf pans.  Blend sugar and oil thoroughly.  Beat in eggs until light.  Add pumpkin, blend.  Add flour, ground flaxseed, baking soda, baking powder, cinnamon, nutmeg, cloves, salt, and pumpkin pie spice.  Beat on load speed until blended.  Pour batter into greased loaf pans.  Bake for 1 hour.  When done, leave in pans for 15 minutes to cool.  Remove from pans. Sprinkle with confectionary sugar if you'd like.

Nutrition Facts for 1 tablespoon of Ground Flax Seed
Calories - 37
Total Fat - 3 g
Saturated Fat - 0.25 g
Total Carbohydrate - 2 g
Fiber - 2 g
Protein - 1 g

In one tablespoon of ground flaxseed, there are 2 grams of total carbohydrates.  There are also 2 grams of fiber. Since the total carbs are equal to the fiber, the result for net carbs is zero.

How to Cook With Flax Seed

Ground flaxseed adds a nutty, whole grain flavor to your baked goods.  It can be added to or substituted for flour, oil, or egg in a recipe.
3 tablespoons of ground flax = 3 tablespoons of flour and 1 tablespoon of oil or fat
You may exchange 1/4 - 1/3 of the flour in a recipe with ground flax.  Flax has no gluten so if you substitute at a higher rate your baked good will be heavier and denser.
Example: A recipe calls for 3 cups flour and 1/2 cup oil.  Replace with 2 cups flour and 1 cup ground flaxseed.  Reduce the oil by 1/4 cup.  Each recipe responds differently, so play with it until you get it just the way you like it.
